Ingredients
Pork Chops
8 pork chops with bone-in
1/2 tsp pepper
2 tsp olive oil
1/4 cup chopped pecans, toasted
cloves of garlic
Maple Butter
1 tsp green onion, minced
8 tbsp butter, 1 tbsp separated
1/4 cup apple juice
1/2 cup thickened cream
1/2 cup maple syrup
1/2 tsp salt
1/2 tsp pepper
Glazed Onion Apples
2 large apples, peeled and sliced
1/2 sliced onion
2 tbsp butter
2 tbsp brown sugar
Method
Add 1 tbsp of butter to saucepan, heat and add green onion to sauté. Mix in apple juice and simmer until reduced to half.
Add in cream, syrup, salt and pepper and simmer until mixture is reduced by half and caramel like. Then mix in the remaining butter, 1 tbsp at a time, constantly stirring till melted.
In a large frypan, add apples, onion, butter and sugar on medium heat for 3 minutes till onions and apples are softened, place aside for later.
Rub chops in olive oil and pepper, grill over medium heat with garlic for 4-5 minutes each side. Let stand.
Reheat maple butter and onion apples if needed. Divide the apple mixture among plates, top each with chops and maple butter. Sprinkle over toasted pecans to serve.
