Ingredients

Pork Chops

  • 8 pork chops with bone-in

  • 1/2 tsp pepper

  • 2 tsp olive oil

  • 1/4 cup chopped pecans, toasted

  • cloves of garlic

Maple Butter

  • 1 tsp green onion, minced

  • 8 tbsp butter, 1 tbsp separated

  • 1/4 cup apple juice

  • 1/2 cup thickened cream

  • 1/2 cup maple syrup

  • 1/2 tsp salt

  • 1/2 tsp pepper

Glazed Onion Apples

  • 2 large apples, peeled and sliced

  • 1/2 sliced onion

  • 2 tbsp butter

  • 2 tbsp brown sugar

Method

  • Add 1 tbsp of butter to saucepan, heat and add green onion to sauté. Mix in apple juice and simmer until reduced to half.

  • Add in cream, syrup, salt and pepper and simmer until mixture is reduced by half and caramel like. Then mix in the remaining butter, 1 tbsp at a time, constantly stirring till melted.

  • In a large frypan, add apples, onion, butter and sugar on medium heat for 3 minutes till onions and apples are softened, place aside for later.

  • Rub chops in olive oil and pepper, grill over medium heat with garlic for 4-5 minutes each side. Let stand.

  • Reheat maple butter and onion apples if needed. Divide the apple mixture among plates, top each with chops and maple butter. Sprinkle over toasted pecans to serve.
