Ingredients

  • 2 cups onions, thinly sliced

  • 1/2 cup butter, softened

  • 1/4 cup flour

  • 2 cup shredded cheese

  • 2 cups beef stock

  • 2 cups milk

  • Salt and pepper to taste

  • Croutons

Method

  1. Heat butter in a large saucepan, and onions and cook over low heat until tender, approx 20 minutes.

  2. Stir in flour and gradually add the stock and milk. Cook and stir until bubbly then reduce to low.

  3. Add in cheese gradually and stir constantly until melted, don’t let the soup boil.

  4. Season to taste and serve with croutons.
