Ingredients

  • 1/2 cup butter, softened

  • 1/4 cup fresh coriander

  • 1 tbsp lime juice

  • 1 tsp lime zest

  • 12 whole ears sweet corn, remove husks

  • Grated cheese (Cotija if available)

Method

  1. Mix together butter, coriander, lime juice and zest.

  2. Shape into a log and wrap in glad wrap.

  3. Refrigerate for 30 minutes or till firm.

  4. While the lime butter is setting, wrap each of corn with foil.

  5. Grill corn, in foil over medium heat for 20 minutes turning occasionally.

  6. Once set, while the corn is cooking, cut lime butter into 12 even pieces.

  7. Remove corn from grill, open foil allowing steam to escape.

  8. Serve corn with slice of lime butter and top with grated cheese.
